Peanut Butter and Tahini Asian Soba Noodle Salad

Ingredients (Sauce):
5 tbsp. Soy sauce
2 tbsp. Date syrup or ¼ cup brown sugar
2 tbsp. Raw tahini sauce
2 tbsp. Peanut butter (preferably natural)
Salt and pepper
1 tbsp. Sesame oil
1 tsp. Rice vinegar
2 garlic cloves minced
1cm ginger minced
¼ cup water
Ingredients (Salad):
½ pack of soba noodles (chilled)
1 Cucumber (cut into thin strips)
1 carrot (cut into thin strips)
¼ white or red cabbage (shredded)
Green onions (cut into thin strips)
Handful of basil leafs
Few mint leafs
500gr firm tofu (optional)
For the sauce , mix all together until all ingredients are combined and the sauce is in liquid form that you can pour over the salad. If it’s too firm, add some water and mix again.

For the salad, prepare the soba noodles based on package instructions and chill in the fridge.
For the Tofu, cut it into cubes, you can deep fry it, or just fry it on a pan with almost no oil until the outside is crusty (make sure you chill before adding to the salad)

Mix all ingredients together and add sauce!
